Lime Marinated Chicken Skillet
An easy, delicious dinner!
You will need 4 fresh boneless, skinless chicken breasts.
Marinade:
½ cup good quality olive oil½ cup fresh limejuice
1-tsp cumin
1-tsp sea salt
Ingredients:
1 large green bell pepper, thinly sliced
1 large red bell pepper, thinly sliced
1 large sweet onion, thinly sliced
1 cup chopped mushroom
1 cup Monterey Jack cheese
1-2 chopped jalapeno peppers (optional!)
Topping:
1-cup fresh salsa (canned will do in a pinch, but fresh makes a big difference)
Mix olive oil, limejuice, cumin and sea salt and combine well. Marinate chicken in olive oil mixture for at least 30 minutes.
Broil or bake chicken breasts, whole, until cooked through, turning over every ten minutes to avoid drying.
When fully cooked and juices run clear, cut breasts on angle into thin slices. Set aside.
Combine salsa and ranch dressing in saucepan and cook slowly in saucepan, just to heat. Stir often.
Heat olive oil in deep frying pan. Add onion and cook, stirring constantly until clear. Add peppers and onion. Cook 5 minutes until tender.
Add chicken and cook together, tossing every minute or so. Add a splash of limejuice for flavour and to keep colours vibrant.
Place chicken and pepper mixture on plate and top with cheese and jalapenos. Drizzle with salsa ranch dressing.
Serve with rice and beans if desired.
